Samphire Spaghetti

This samphire spaghetti is warm, hearty and super healthy. It is quick and easy, and a perfect dish to impress your guests. It's the kind of meal that's perfect for when you want something special but don't have a lot of time. The spaghetti is tossed with salty olives and crunchy samphire and is all about big flavours!


Samphire Spaghetti - 2 persons


250g spaghetti 

1 red onion, finely diced 

3 garlic cloves, finely sliced 

2-3 spring onion, finely sliced 

2 medium tomatoes, finely diced 

70g of your favourite olives, finely sliced 

100g samphire 

Olive oil

Pinch of pepper & salt


Start with the red onion and fry this in a bit of olive oil, pinch of pepper and salt in a frying pan with a lid on medium to low heat, 7-10minutes. 

Then add the spring onions, garlic and olives. 

Meanwhile cook the spaghetti and add 5-10 tbsp of the cooking liquid to the frying pan, depending how thin you like to have the sauce. 

When the pasta is nearly done, add the samphire to the frying pan, stir well, this only needs a few minutes. 

Add more cooking liquid to the frying pan if necessary. 

Add the cooked spaghetti to the frying pan and mix carefully.
