Lemon Cake

Our lemon tree is really happy right now, and it's giving us loads of fruit. This has got me into baking this simple yet delicious lemon cake quite often. It's light, fluffy, and has just the right amount of lemony sweetness 🍋.


It is delicious as a treat to serve with a cup of coffee or tea, it also makes a great light dessert for those warm summer evenings. Scroll down to have a look at my lemon cake recipe!

Lemon Cake 275g flour

60g honey or agave syrup 

80ml olive oil

2 tsp baking powder 

1,5 lemon, zested and juiced


Preheat the oven to 200 degrees.

Use a cake tin lined with baking paper.

Mix flour, honey, baking powder and lemon zest in a bowl.

Add the olive oil, lemon juice and 170ml cold water, mix until smooth.

Poor the mixture into the baking tin and decorate with a few slices of fresh lemon. Bake for 30 minutes and leave in the tin to cool for 10 minutes. Then transfer to a wire rack to completely cool.
